Tantalizing Relish Recipes to Make

Gourmet Vegetable Relish Recipes

Corn Relish Recipe

  • 4 cups corn
  • 1 cup diced green peppers
  • 1 cup diced red bell peppers
  • 1 cup finely chopped celery
  • ½ cup minced onion
  • 1 ½ cup vinegar
  • ¾ cup sugar
  • 2 teaspoons salt
  • 1 ½ teaspoons dry mustard
  • 1 teaspoon celery seed
  • ¼ teaspoon Tabasco sauce
  • ½ teaspoon turmeric
  • 2 tablespoons flour

In a large saucepan combine the peppers, celery, onion, vinegar, salt, celery seed, Tabasco sauce and boil for 5 minutes. Carefully scoop out about ½ cup of the hot liquid and mix it with the dry mustard and turmeric, then return it back to the saucepan.

Mix the flour with ¼ c. cold water and add to the saucepan, stirring constantly until smooth. Now add the corn and boil for 5 minutes until thickened, again stirring constantly.

Fill clean, hot canning jars to within ½ inch of the top and add the lids. You’ll want to can these now in a boiling water bath for 15 minutes, to do a complete seal. This recipe will make about 3 pints of relish.

Beet Relish Recipe

  • 12 cooked beets
  • 1 medium onion, chopped
  • 2 cups chopped cabbage
  • 1 sweet red pepper, chopped
  • 1 ½ teaspoons salt
  • ¾ cup sugar
  • 1 ½ cups vinegar
  • 2 tablespoons horseradish

Process all the vegetables with a food processor until fairly finely chopped. Place all ingredients in a large saucepan and bring to a boil. Reduce heat and let simmer 15 minutes, stirring several times. Gently scoop this beet relish into sterilized, hot canning jars and put on lids. Can in a boiling water bath for 10 minutes in pint jars.

Onion & Rhubarb Relish

  • 8 cups sliced rhubarb
  • 4 cups onion, chopped
  • 4 cups packed light brown sugar
  • 2 teaspoons salt
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 cup vinegar
  • 1 clove garlic, minced
  • 1 tablespoon whole mixed pickling spices

In a large saucepan, combine all ingredients except the clove garlic and whole pickling spices. Tie those two ingredients in a small cheesecloth bag and add to the saucepan. Bring to a boil, then reduce heat and simmer until rhubarb just becomes tender, roughly 10 minutes.

Remove the spice bag and throw out. Scoop carefully the relish into sterilized, hot canning jars, the put on the lids. Can in a boiling water bath for 5 minutes ensuring that the jars seal.

Cranberry & Jalapeno Relish Recipe


  • 1 cup dried cranberries
  • 1/2 cup orange juice
  • 1/2 cup cut red onion
  • 1/2 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1 teaspoon minced garlic
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup lime juice
  • 1/2 teaspoon ground cumin

In a bowl, mix the orange and lime juices, dried cranberries, onion, cilantro, garlic, salt and cumin and stir well. Chill in refrigerator at least 2 hours and then stir again before serving. This relish is best served cold, but can also be canned as well.
