While I try to eat healthy, I love it when I run across a truly exceptional recipe. I literally could not stop eating this (that can be a bad thing). You have got to try this cilantro and lime cauliflower recipe!
Of course if you don’t care for either cilantro or lime, you most likely won’t like it.
If you bring it to potlucks or something, be prepared to be asked repeatedly for it, or the recipe. Did I mention it’ super healthy too? Here it is:
Cilantro and Lime Cauliflower Recipe
I had trouble finding smoked paprika in my local stores, so I ordered the brand above. You can either manually grate the cauliflower, or pulse it in a food processor to a fine granular consistency.
In a saucepan over medium high heat, add the coconut oil, garlic and cauliflower. Stir occasionally while cooking about 10 minutes.
When done, place this in a large mixing bowl. Add the lime juice, cilantro and spices and stir well. Gently toss in the chopped avocados. Serve up and watch for the oohs and aahs.
