If you haven’t noticed by now, I love hearty soups and stews. Check out this delicious sausage and cabbage stew recipe here. They tend to be healthy, easy to make and delicious. Another thing I love about them, is most can be made in a crockpot. I just load it in the morning, and come home to a beautiful dinner, ready to eat. The house smells so delicious and inviting upon entering.
Today’s cabbage stew recipe can also be made vegan style, by simply omitting the sausage. Conversely, a vegan sausage could be substituted as well.
Sausage and Cabbage Stew Recipe
- 1 onion chopped
- 3 cloves garlic, minced
- 2 T. olive oil
- 2 carrots, sliced
- 1 small head of cabbage chopped
- 1 small apple, peeled and diced
- 1 package (about 12 oz) of any type of sausage, chopped
- 2 c. hard cider
- 2 T. chicken bouillon (found one with no GMO and no MSG)
- 2 bay leaves
- 2 sprigs of thyme
- Salt & pepper to taste
Saute the onion, garlic and oil in a saucepan. If you are in a hurry, you don’t have to do that. Load everything into a crockpot. Cook on low heat for 6 – 8 hours. Before serving remove the sprig of thyme and bay leaf.
