Pineapple Jicama Salad in a Cilantro Vinaigrette Recipe

Recently I made this wonderful pineapple jicama salad for a light fare food.  Not only is it a healthy dish, it was super refreshing and full of flavor.

2 Jalapeño peppers, seeded and finely chopped
2 T. lime juice
2 T. rice vinegar
1 bunch fresh cilantro, minced
1/2 t. salt
1/4 t. pepper
1/4 c. olive oil
1/2 fresh pineapple, chopped
1 jicama, peeled and cut into strips
3 c. baby greens salad
1 avocado, peeled and diced

Directions
In a bowl, whisk the first 6 ingredients together. Slowly add in the olive oil while whisking to complete this.

Fold in the jicama and pineapple. Allow this to marinate an hour.

Place the baby greens on a plate. Add the pineapple and jicama blend, then top with chopped avocado.
