It snowed last night and it’s been bitter cold all week. This has left me feeling quite chilled to the bone. What sounded good was a homemade batch of split pea soup. I’m going to put my split pea soup recipe below. It turned out amazing!
Why don’t we make this hearty soup more often? It’s healthy, delicious, and cheap to make. Putting ham or bacon in it is truly optional, so it can be a vegan version, if you desire.
Split Pea Soup Recipe
8 cups water
2 1/4 cup dried split peas
ham bone or cooked bacon (optional)
3 stalks of celery
1/2 t. salt
1/4 t. pepper
1/4 t. dried marjoram
1/4 t. dried thyme
1/4 t. dried rosemary
In a large pot put the water and the dried split peas together, then bring to a boil. Cut up all the vegetables and put in. If you are going to use the ham bone or bacon, put that in as well. Reduce heat to medium.
Add all the spices. Cook on medium heat for half an hour. Reduce heat to simmer and simmer an hour, then turn off the heat.
When the soup has cooled, if you used the ham bone, remove it and pick the pieces of ham off and put in a dish. Take the soup and run it through either a Vita-Mix machine, or a food processor for a smooth consistency.
Return back to the pot, add the ham back in (if used), then heat and serve.
