This weekend, I made a very healthy soup recipe called Garbanzo Bean Noodle Hearty Healthy Soup Recipe. It is a definite twist from a typical vegetable soup, but it turned out tasting great.
If you are looking for something a bit different, yet healthy and low calorie, try it. If you want to add some type of meat or other protein source, you can do that too.
Healthy Soup Recipe Garbanzo Bean Noodle
- 1 yellow onion, chopped
- 2 carrots, shredded
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp. basil
- 1 tsp. thyme
- 4 oz. cut green beans
- 4 c. chopped purple cabbage
- 1/2 c. peas
- 6 c. water or vegetable broth
- 3 c. cook garbanzo beans (otherwise known as chickpeas)
- 1 14.5 oz can diced tomatoes, undrained
- salt & pepper to taste
- 6 oz. spaghetti noodles broken into thirds, uncooked
- 2 T. chopped Italian parsley
Add all ingredients to a crockpot except peas, Italian parsley and noodles. Cook over low heat for 6 hours or until vegetables are tender.
Add the noodles, peas and Italians parsley and stir. Allow to cook another half hour, or until noodles are fully cooked.

This may be topped with cheese, croutons or simply served hot, as is. It is truly a delicious healthy soup recipe!
