Today, I was in the mood to cook something different. Something warm. I decided to cook this strange chipotle orange chili recipe. I made my version without any meat, so it is a vegan dish. You could add any type of meat to this if you’d prefer. Chicken would taste great in this.
This tasted SO amazing. If you ever enter any chili cookoff competitions, this is one you should consider entering. It’s significantly different, yet delicious. I would say it has a medium spicy heat to it, but you could amp it up, or cool it down to your taste.
So, here it is:
Chipotle Orange Chili Recipe
- 1/4 c. water
- 1 large onion chopped
- 3 minced garlic cloves
- 3 T. chili powder
- 1 t. paprika
- 1/2 t. marjoram
- 2 T. tomato paste
- 2 t. maple syrup
- 2 chipotle chiles minced (in adobo sauce)
- 1 14.5 oz can of fire roasted dice tomatoes, undrained
- 3 c. cooked pinto beans
- 1 c. vegetable broth
- 2 t. orange zest (finely grated peel)
- 1 t. liquid smoke
- 1/2 c. orange juice
- salt & pepper to taste
Put all ingredients in a slow cooker. Cook on low for 6 hours. Serve with sliced avocados and chopped fresh cilantro. If you wanted, soup cream and cheese could also be toppers.
